Great recipe I found!!! My toddler always asks for a Spider-Man ice cream which we have to say no because big brother can't have one?!! But, with my Type 1 Diabetic, it has been nearly impossible to find a carb free ice cream snack that's healthy to purchase or substitute for him or our toddler to enjoy with him.
This combines healthy and snacks together. I used these molds from IKEA. Can’t beat $1.99!!
On the menu for dessert? These beauties. I love having pops in the freezer because it is a great snack for anyone really. I love post-nap chilling with the kids on the patio chomping on some pops. Plus, they are perfect for bribery. I mean seriously, popsicles are great motivators for when you want your kids to do things right?
In each mold, put some berries. I used strawberries and blueberries but you can use whatever mix of berries suits you!
Then, mix together the almond milk, vanilla, and agave nectar. I like to use a mason jar because I can get a good shake going and I think it’s fun. Landon my toddler loves to see me shake things up and loves to help.
Then pour the almond milk mixture into the molds and place the handles into the pop mold.
Place them in the fridge overnight. Ta-Da!!!
Ingredients
- 1/2 cup strawberries (frozen or fresh)
- 1/4 cup blueberries
- 1/2 cup unsweetened vanilla almond milk
- 1/2 t. vanilla extract
- 1 t. agave nectar (or favorite sweetener)
